ALISON DE CASTRO:  Sitting down with Chef Feker.  What are you making for us today?

CHEF MICHAEL FEKER:  I brought you something very special today – I brought you some Free Raised® Strauss Veal scallopinis.  They are hormone free and they are antibiotic free, and they are grazed free range.  So, their flavor is amazing.

MOLLY FAY:  So, why do you feel so passionate about that veal?

CHEF FEKER:  This veal, I tell you, doing this kind of veal, and really caring about the environment is not a process, it’s a passion.  And, Randy and Tim Strauss, from Strauss Veal, they do have that passion.

That’s why I’m passionate about it, because it gives me the ability to work much less.  The flavor is phenomenal.  I had this as a special on Saturday night.  Within 45 minutes we sold out.  The Strauss veal is phenomenal.  It really is.  The flavor is fantastic.

MOLLY:  Delicious.

CHEF FEKER:  Did you notice something - you can just cut that veal with a fork.

MOLLY:  Um-hm.

CHEF FEKER:  And, you do not need a knife.

This veal is just amazing, and I’m so proud to serve it.  And, Tim and Randy have partnered up with me, as long as letting me use their product.  And I love it.  I really do.

ALISON:  And the thing about veal is that it has such wonderful flavor.

CHEF FEKER:  That’s right
