(makes approx 8 oz.)
1/2 tsp. caraway seed
1/4 cup finely chopped red onion
1/4 cup white wine
4 oz. Glace de Veau Roasted Veal Stock Reduction
1/4 cup heavy whipping cream
Salt and pepper to taste
PLACE caraway seed in a heavy saucepan; toast for about 1 minute.
ADD onion and wine; reduce by 50%.
STIR in Glace de Veau Roasted Veal Stock Reduction and heavy whipping cream; bring to a simmer. Season to taste with salt and pepper.
