(makes approx 16 oz.)

2 ears of sweet corn
1 lb. Glace de Veau Roasted Veal Stock Reduction
3/4 cup heavy whipping cream
1 clove garlic, chopped
1/2 tsp. smoked paprika
Salt and pepper, to taste

CUT corn off cobs; add corn kernels and cobs to a medium saucepan. Add Glace de Veau Roasted Veal Stock Reduction, heavy whipping cream and garlic. Bring to a boil; reduce until nape (coats the back of a spoon).

STRAIN sauce; stir in paprika. Season to taste with salt and pepper.
